Papa’s Pilar (Hemingway Rum Company) produces ultra-premium rums inspired by Ernest Hemingway, using solera blending with rums from the Caribbean, Central America, and Florida. Their Key West distillery & store is located at 201 Simonton St (corner of Greene & Simonton), and they offer a range from flagship Blonde & Dark rums to limited editions and specialty finishes like sherry cask.
