A New Oyster Tradition Comes to Key West
Walk through the doors and you immediately understand why. The atmosphere is relaxed, casual, and unmistakably Key West. Wooden picnic tables, harbor views, boats coming and going, pelicans gliding overhead, and plates piled high with fresh seafood create the kind of experience that feels increasingly rare.
The Half Shell Raw Bar offers a taste of old Key West that's hard to find anywhere else.
Fresh oysters remain one of the biggest attractions. Order a dozen and watch them go from shell to plate in front of you, or take them broiled with garlic. Alongside them, guests can enjoy local favorites including steamed middleneck clams, conch ceviche, peel and eat Key West pink gold shrimp, and a basket of fish and chips, all served in a laid-back dockside setting that has made the restaurant a beloved landmark since 1972.
And now, a new chapter is being added to the story.
Shuck, Slurp and Celebrate
On Saturday, November 14, 2026, the inaugural Key West Oyster Fest makes its debut at the Historic Seaport in front of Half Shell Raw Bar, running from 5 to 10 p.m.
Presented by Half Shell Raw Bar in partnership with Everglades Oyster Company, the evening brings together oyster farms, Key West restaurants and chefs, legendary shuckers, live music, artists and great drinks, with all you can eat oysters and an all you can drink bar.
Chef Norman Van Aken serves as the 2026 Oyster Fest Ambassador. Van Aken was recognized in Spain in 2006 as one of the founders of New American cuisine, alongside Alice Waters and Paul Prudhomme, and is the author of My Key West Kitchen.
Everglades Oyster Company brings something no other farm on the continent can. Billing itself as the southernmost oyster farm in the USA, it raises tropical oysters in the protected waters of the Ten Thousand Islands on the edge of Everglades National Park, and describes their flavor as oceanic upfront, with sweet coconut and an umami finish.
